Salmon with Pesto Crust Recipe
This recipe for pesto crusted salmon yields tender, flaky salmon with a crunchy, flavor-packed crust.

- 1 lb Salmon. Divided into two 1/2 pound salmon filets, preferably with the skin on and de-scaled
- 1/4 cup Pesto. Preferably a firmer pesto with less olive oil to prevent too much browning of the pesto crust. I like the brand Cucina & Amore.
- 1/4 cup Seasoned breadcrumbs with parmesan cheese. I like the brand 4C's Gluten Free seasoned breadcrumbs with parmesan, but you can use another brand of seasoned breadcrumbs if you prefer.
- 1 tbsp Garlic powder.
- 1/2 tbsp Honey.
- 1/2 tsp Red pepper flakes.
- 1/4 tsp Salt.

Preheat the oven to 415 degrees F
Mix all the ingredients except the salmon together
Pat the salmon dry with paper towels
Pat the breading on the top of the salmon filets, skin-side down and flesh side up
Place the salmon skin side down on a baking tray lined with parchment paper
Cook the salmon for 17-18 minutes, or until an instant read thermometer shows an internal temperature of 145 degrees F
